Guacamole

Ingredients:
3 ripe avocados
1 diced roma tomato (deseeded)
1/2 jalapeño pepper (deseeded)
1 small clove garlic (smashed)
2 tbs fine chopped red onions
2 fine chopped green onions
2 tbs chopped cilantro (or parsley if you don,t like cilantro)
juice of one lime
couple dashes ground cumin
salt and lots fresh ground pepper
Instructions: Smash the avocados in a bowel, (not to fine) immediately mix in the lime juice to keep the avocados from turning brown. Stir in the rest of the ingredients , salt and pepper to taste.

Mexican Cowboy Beans

Igredients:
3 cans pinto beans (drained and rinsed)
1 can petite diced tomatoes
1 good sized smoked ham shank
1 medium sized chopped onion
2 minced deseeded jalapeño peppers
2 cloves minced garlic
2 bay leaves
2 tbs apple cider vinegar
2 tbs Worcestershire sauce
2 tbs brown sugar
salt and pepper
Instructions:In heavy dutch oven place the ham shank one can of beans and the rest of the ingredients. Cook over low heat two or three hours until the ham shank is tender. Remove the ham shank and clean off all the good meat and return it to the pot along with the rest of the beans. Cook another 30 minutes or so and adjust the seasoning.

Fish Tacos

Ingredients:

  • 2/3 shredded cabbage
  • 1/3 shredded red cabbage
  • some shredded carrots
  • thinly sliced red onions to taste
  • salt and pepper
  • fresh limes

 

Dressing for Slaw:

  • 1/4 cup sugar
  • 1 tbs sesame seeds
  • 2 tbs finely chopped onion
  • 1/2 tsp Worcestershire sauce
  • 1/4 tsp paprika
  • 1/2 cup good vegetable oil
  • 2 tbs balsamic vinegar
  • 3 tbs cider vinegar
  • 4 dashs shot sauce

 

Breading for frying fish:

1 cup each flour, cracker meal, corn meal, Kentucky colonel seasoning. Salt and pepper, onion salt, dash red pepper.

Heat corn or flour tortillas. Dredge the fish in the breading and fry: then remove to paper towels place the fish on the warmed tortillas shell then the slaw mixture. Coat the slaw with the dressing on the taco (important not to dress the slaw first) squeeze a lime over the whole thing.

Black Raspberry Skillet Custard Pie

(Serves 8)

Ingredients:

  • 1 tbs butter
  • 1 1/2 cups milk
  • 2/3 cup ap flour
  • 1/2 cup sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3 cups black raspberry

Heat oven to 350 deg butter 12” cast iron skillet. Combine milk, flour, sugar, eggs, salt, vanilla and beat together with mixer, then pour batter into skillet and scatter berries on top and sprinkle with 2 to 3 tbs sugar. Bake 40 min until puffed and knife poked in center comes out clean. Dust with powdered sugar and enjoy! Any berry will work but you might have to adjust the sugar.

Great served with ice cream!

Old Fashion Chicken Fried Steak & Country Gravy

Ingredients:

  • Equal parts Kentucky colonel seasoning and flour
  • Add to taste: salt pepper onion salt dried oregano dried thyme

Mix all dry ingredients together and coat the meat well on both sides (use good tenderized cube steak – round steak}. Let the meat rest 5 minutes then coat the meat again. Fry in 1/2 inch oil in cast iron skillet over medium high heat, 360 degrees oil temp till done.

Fresh Green Benz

Ingredients:

  • 4 cups fresh trimmed green benz
  • 1/2 pound bacon fried crispy
  • 1/2 cup chopped onion
  • 1/2 cup chopped toasted almonds
  • 1 vitamin C pill

Cook the green benz in salted boiling water with the vitamin C pill, 7 to 10 minutes –  depending on desired tenderness. The vitamin C pill will keep the green color. Shock the benz in ice water till cold. In skillet brown bacon till crispy then add onions. When onions are tender add the drained benz and toasted almonds to the skillet. Cook till warm or benz are desired tenderness.

Mashed Taters

Ingredients:

  • About half peel 3 lbs red potatoes
  • 1/2 cup sour cream
  • 1 stick real butter
  • Salt Pepper

Put half peeled taters in cold water and then boil till just tender. Drain well and add sour cream and butter, then smash but leave some texture. Salt and pepper to taste. Enjoy!
